My new favorite beverage on a hot Minnesota summer day... refreshing ginger lemonade!
There are quite a few recipes to be found online, but here is my version:
2 cups fresh squeezed lemon juice (approx 6 large lemons)
7 cups cold water
Ginger Syrup:
1 1/2 cups water
1 cup sugar
1/2 cup honey
5 ounces fresh ginger (about 9 Tbs)
pinch of cinnamon
Bring water, sugar and honey to a boil... add ginger and cinnamon, simmer for a minute or two. Remove from heat, cover and let "steep" for 30 minutes. (Some recipes say steep for an hour... I actually just steep for as long as it takes me to squeeze the lemons and clean up the counter!)
Combine ginger "syrup", lemon juice, and cold water in large pitcher... chill... and enjoy!
